| In 2002 we created BAXTER to highlight the very best in North Coast viticulture, focusing on Mendocino and Napa counties. We have sought out the finest expressions of site for each specific varietal we produce. Each of our vineyard sources are unique and take great pride in tending their crop which shows in the intensity of character in the finished wines. Our philosophy of producing only single vineyard wines comes from our deep respect for terroir and desire to make distinctive wines.
We employ old world techniques at the winery to ensure that the wines remain natural and expressive, not over manipulated. By using indigenous yeast we can be confident that the flavors imparted to the wine are also true to site. After desteming, all our wines are fermented whole berry in small open-top containers and punched down by hand before being drained and pressed gently in our basket press. The wines are then aged in French oak barrels for 18 to 30 months, depending on the wine, then finished unfined and unfiltered whenever possible. Our wines are personally guided from vine to bottle guaranteeing the highest quality and expression possible from each vineyard. Enjoy!
